Spring is springing and warmer weather and longer days seem to be an actual reality versus a distant possibility from a few months ago. COVID is still very much here, despite the mandates being lifted, the vulnerable being left behind and politicians ignoring the data coming from parts of Asia and Europe once again as another wave sweeps the United States. There are a lot of unknowns, something I have become too familiar with as someone who lives with life after cancer. Although I have been prepared for unknows for most of my life, it never gets easier, but distractions help.

Once again, I find solace in cooking, my herb garden and finding new vegan products. While work is insanely busy, I strive to find a balance during the week for semi homemade meals that can help lighten the load. Trader Joes has some amazing vegan products that make weeknight meals a little simpler.

Top 8 Trader Joeā€™s Frozen/Refrigerated Vegan Finds

#1 Meatless Meat Eaterā€™s Pizza

Who doesnā€™t love a frozen pizza? Pair it with a fresh side salad and baked sweet potato fries and voila, dinner is served!

#2 Cauliflower Gnocchi

This is a weeknight go to, I suggest air frying or baking, not boiling and for an extra easy meal, pour a jar of their bruschetta over and enjoy!

#3 Spinach and Cashew Ravioli

In the refrigerated section, not frozen, and totally amazing! I served this recently over their Thai Green Simmer Sauce with fresh air fried tofu and it was delish. Topped with my home grown basil and a squeeze of lemon.

#4 Tempura Cauliflower

Anyone up for burger night?! Serve with all the pickles and on pretzel buns and add these cauliflower wings as a side for a sweet and savory crunch.
Eat all at once, they do not keep their crunch overnight.

#5 Vegetable Gyoza

Sometimes a big bowl of veggie broth with simmered veggies is the perfect comfort food. Steam some of these babies and serve on top with some soy sauce and sesame oil and wow, umami central!

#6 Vegetable Birdā€™s Nest

Sometimes I just eat a few of these and some crackers when the work week is a toughie and they are literally the best. The crunch, the veggies, the dipping sauce, yum!

#7 The Impossible is Possible!

Thatā€™s right, Trader Joes sells the Impossible ā€˜Chickenā€™ Nuggets! I like to make a big salad, air fry these and chop them up with some homemade croutons and it makes salad night a little but more fun.
Preferred dressing: Homemade cashew based Caesar ā€” donā€™t forget the capers!

#8 Vegetable Spring Rolls

Literally one of my favorite things to eat and it is tough to find a vegan version mainstream, typically the wrapper has egg in it. But this one is a vegan, crunchy delight! Serve with a cold noodle salad with fresh herbs and enjoy!
