September Thymes

Tomatoes are still lingering in early to late September as browns, yellows and oranges are welcomed into the farmers market. I love this simple potato, tomato and herb tart. It is easy, filling and offers the best ingredients September has to offer.

Ingredients:

5–7 small potatoes, washed, dried and sliced thinly

Large handful of baby tomatoes, rinsed and cut in half

2 sprigs of rosemary, roughly chopped

2 cloves of garlic, peeled and finely chopped

Glug of olive oil and salt to taste

Method:

Arrange the sliced potatoes on an oven proof baking dish in a circular motion

Layer the sliced tomatoes over the potatoes

Sprinkle the rosemary, garlic and salt all around the potatoes and tomatoes

Drizzle with the olive oil and bake for 25–30 minutes.
