Chickpea ‘Tuna’ Salad

Even with an extra day this Leap Year in February I am against the clock with my February post. As I’ve been thinking about what to share, I couldn’t help but blend my personal life with work life here and share the recipe I am making with 500 + kiddos in a Brooklyn public school. This un-tuna salad was a huge hit and even the students who didn’t want to try it, ended up trying it and liked/loved it! And seconds were served!

(We got very few “Not for mes”.

Ingredients:

1 can of chickpeas, rinsed and mashed, in between a whole bean texture and a hummus texture

2 carrots, finely chopped

2 stalks of celery, finely chopped

Dressing:

1/2 cup vegan mayo

Old Bay Seasoning to taste

Method:

Mix all prepared ingredients together in a medium to large bowl and serve over crackers of your choice.

*Some classes liked it spicier than others and I loved that!

Instead of burning time worrying, I rather be in the kitchen surrounded by food and flavors. Facing anxiety through cooking and getting that burnt time back.
