As we approach Veganuary, it is amazing and inspiring to see how far vegan products have come. Going between the US and UK, there are so many new products to make being vegan and living a compassionate life easier and easier.

Quiche is one of the first things I learned to make years ago as a kid, but when I went vegan, I never found a decent recipe with tofu. Now, there are various plant based egg products that can make your quiche as creamy and fluffy as you like.

One of the things I like best about quiche is that you can put anything in it, clean out your fridge and mix and match different veggies every time.

Ingredients

1 cup plant based egg

1 1/2 cups plant milk, I like unsweetened oat the best

(Any fillings you like here)

Plant based meats, onions, leeks, spinach, broccoli, mushrooms, anything!

Plant based shredded cheese

Method:

Lightly sauté all veggies and onions and if using plant meat

Mix the milk and egg in a medium bowl

Add filling mixture

Pour into an oven proof baking dish

Bake for about 35 minutes, checking occasionally

Cool and enjoy!
