Meal Kits-

It’s back to school season and I am looking for ways to make weeknight meals easier without skimping on flavors or nutrients. In this five part “Back to School Series’ I am starting with my first tip/idea to make dinner easier in what can tend to be a stressful season.

Enter meal kits. I have used meal kits in the past and really liked them, but found there was a lot of waste and plastic. After about ten years, I am going to try it again and with Purple Carrot, an all vegan meal kits. I love their brand, recipes and ingredients.

However, in all our research, my husband accidentally ordered a Hello Fresh box. We decided against Hello Fresh because they don’t have a vegan option and only have vegetarian. On the website it says something about making it vegan by just omitting the dairy items, but I find that super wasteful.
